Garlic Lime Grilled Chicken
Our house doesn't even have air conditioning, so you have to figure out the 'science' of closing and opening windows and blinds in sync with the sun. And even though we have pretty mild summers, sometimes it's still not enough. Then you just have to sweat it out.
We need to get a little more creative with our grilling. Grilled chicken isn't all that creative, but it is tasty! Garlic lime grilled chicken that takes almost no time to make is even better.
GARLIC LIME GRILLED CHICKEN
1/3 c. soy sauce
1/4 c. fresh lime juice (about 2 limes)
1 Tbsp. worcestershire sauce
1/2 tsp. ground mustard
2 cloves garlic, minced
4-6 chicken breasts
freshly ground pepper
1. For the marinade, combine soy sauce, lime juice, worcestershire sauce, ground mustard and garlic in a mixing bowl. Stir to combine.
2. Place chicken breasts into marinade and let sit for 30 minutes.
3. Place chicken on grill over medium heat. Season with pepper on the side facing up. Cook for 4-7 minutes then flip. Season other side with freshly ground black pepper and cook 4-7 minutes more (or until done all the way through).
